Fresh Vegetable Entree Facility - Edina, Minn.
The Freshtables venture at the Green Giant facility in Edina, MN required conversion of a 12,000-square-foot warehouse into a pilot processing facility and offices. The facility produces enough fresh vegetable entrees for a test market under conditions that duplicate a full-scale plant. The project included sanitary refrigerated process and packaging areas, a test kitchen, bacteriological lab, storage coolers, freezers, shipping and receiving, headquarters and employee facilities.
Working with the clients’ R&D and operations personnel, Ibberson became an integral part of the project team under all the corporate secrecy restrictions normally associated with a new project. Ibberson was involved in site selection and acted as the designer and project manager. These roles included preparing design drawings and specifications with bid documents, reviewing bids from building, mechanical and electrical contractors, recommending final bid selection, activating the construction team, inspecting construction work and coordinating the contractors’ efforts daily.
The project was completed within budget and on a very tight time schedule, going from concept to “open house” in just six months. Our construction manager worked with the clients’ operating group in the shakedown and start-up processes.
The success of the project was underlined by an announcement in Food Business News that stated the product line had been launched in northern California after being well-received in the Minneapolis test market.
